Heirloom tomato, strawberry and burrata salad

Ingredients
- 3 large multicoloured heirloom tomatoes
- 200 g fragrant strawberries
- 1 burrata (250 g)
- 2 tbsp white balsamic vinegar
- 4 tbsp mild extra-virgin olive oil
- Fleur de sel, freshly ground pepper, a few basil leaves
Method
- Cut the tomatoes into wedges or thick slices and arrange on a large serving platter.
- Wash, hull and halve or quarter the strawberries, then scatter them among the tomatoes.
- Place the burrata in the centre and score it lightly so it begins to open.
- Dress with the white balsamic vinegar, olive oil, fleur de sel and freshly ground pepper.
- Scatter torn basil leaves over the top at the last moment before serving.
Why the pairing works. The fresh, lightly sweet tomato and strawberry combination complements the fruity profile of the Bouzy rosé, while the burrata provides the richness to match its depth.
