Fresh goat's crottin with olive oil and herbs

Ingredients

  • 2 fresh goat's crottins (young Chavignol style)
  • 3 tbsp extra virgin olive oil
  • 1 tsp fresh thyme leaves
  • 1 tsp finely chopped rosemary
  • Fleur de sel, cracked black pepper
  • Lightly toasted country bread slices

Method

  1. Slice each crottin in half horizontally and arrange the halves on a plate.
  2. Drizzle generously with olive oil.
  3. Scatter over the thyme, rosemary, fleur de sel and cracked pepper.
  4. Leave to rest for 5 min at room temperature so the aromas can develop.
  5. Serve with the toasted country bread slices.

Fresh goat cheese tartine with courgette and mint

Ingredients

  • 200 g fresh goat cheese (spreadable style)
  • 1 green courgette
  • 8 fresh mint leaves
  • 2 tbsp olive oil
  • Juice of half a lime
  • 4 slices rye or sourdough bread, toasted

Method

  1. Slice the courgette into very thin ribbons using a peeler or mandoline.
  2. Sauté them in olive oil over high heat for 2–3 min, season lightly, then leave to cool slightly.
  3. Spread each toasted bread slice generously with fresh goat cheese.
  4. Arrange the courgette ribbons on top and drizzle with lime juice.
  5. Garnish with fresh mint leaves and serve immediately.
