Storage & ageing

How should I store a bottle of Champagne?
Away from light and temperature swings, ideally between 10 and 12°C, bottle lying down. A cool, dark cellar is ideal.
Does Champagne keep for a long time?
A non-vintage Brut is generally best enjoyed within 3 to 5 years of purchase. A more structured cuvée, such as a Bouzy Grand Cru built mainly on pinot noir, can age longer under good cellar conditions.
Should Champagne be kept in the refrigerator?
Not for the long term: the dry air and vibrations of a refrigerator are not ideal for ageing. Keep the fridge for the few hours before serving, to bring the bottle to temperature.

Serving & tasting

At what temperature should Champagne be served?
Between 8 and 10°C for classic service, slightly cooler for an extra-brut. A bucket of water and ice for about fifteen minutes is enough to reach the right temperature.
Which glass should I use to taste Champagne?
A tulip or white-wine glass is preferable to the flute or coupe: wider, it lets the aromas develop while preserving the effervescence.
How do I open a bottle of Champagne properly?
Remove the wire cage while firmly holding the cork, tilt the bottle to 45 degrees and gently turn the base, never the cork, for a controlled and quiet opening.
